Creamy Potato and Cauliflower Gratin with a Mild Cheese Crust
This wonderful baked dish brings the whole family together at the dinner table. The mild cream sauce makes the cauliflower incredibly soft, while the golden cheese crust makes vegetables appealing even to hesitant eaters. Sharing meals strengthens family bonds and gives your child the chance to explore new flavors in a relaxed setting. The gratin provides great energy for your child's active day and is very easy to prepare in advance. The soft texture and mild taste are perfect for children three years and older.
Ingredients
- 400 g potatoes (waxy variety, organic preferred)
- 300 g cauliflower
- 150 ml whole milk
- 100 ml heavy cream
- 50 g grated mild cheese (like mild cheddar or gouda, strictly no raw milk cheese)
- 1 pinch of nutmeg
- 1 tsp fresh or dried parsley
- A little butter for greasing the baking dish
Preparation
- Preheat the oven to 180 degrees Celsius (standard bake) and grease a small baking dish with a little butter.
- Peel the potatoes and cut them into very thin slices. Wash the cauliflower thoroughly and break it into small, bite-sized florets.
- Layer the potato slices and cauliflower florets alternately in the prepared baking dish.
- In a bowl, whisk together the milk, cream, parsley, and a pinch of nutmeg. Pour this mixture evenly over the vegetables.
- Bake the gratin in the preheated oven for about 25 minutes, until the vegetables begin to soften.
- Sprinkle the grated cheese over the gratin and bake for another 10 to 15 minutes, until the crust is golden brown.
- Remove the gratin from the oven and let it cool down well before serving. Always test the temperature before your child takes the first bite.
Variations & Tips
- Swap the veggies: You can easily replace the cauliflower with broccoli, kohlrabi, or mild carrots. This brings new colors and flavors to the plate.
- Storage: Leftovers keep well in the fridge for about two days when covered. The gratin can also be frozen in individual portions and gently reheated in the oven when needed.
- Adjust the texture: If your child prefers smoother foods, you can lightly mash the baked vegetables with a fork before serving.
- For the whole family: Parents can sprinkle a little salt, freshly ground black pepper, or roasted pumpkin seeds over their own portions at the table. This way, everyone enjoys the meal.
