Creamy Potato Leek Soup with Whole Wheat Croutons and Vienna Sausages

Ingredients

For 2 to 3 portions, you will need the following ingredients:

  • 400 g potatoes (starchy)
  • 150 g leek
  • 1 tbsp canola oil or mild butter
  • 500 ml vegetable broth (low sodium)
  • 50 ml heavy cream or oat cream
  • 1 slice whole wheat bread
  • 2 mild Vienna sausages
  • A pinch of nutmeg
  • 1 tbsp fresh parsley (chopped)

Preparation

  1. Peel the potatoes and cut them into small cubes. Wash the leek thoroughly and cut it into thin rings.
  2. Heat the oil in a pot and sauté the leek until translucent. Add the potato cubes and cook briefly.
  3. Pour in the vegetable broth. Let the soup simmer over medium heat for about 15 to 20 minutes until the vegetables are soft.
  4. Meanwhile, cut the whole wheat bread into small cubes. Toast the bread cubes in a pan without fat until crispy.
  5. Cut the Vienna sausages lengthwise first, then slice them into small pieces. This makes them easy and safe for children to chew.
  6. Remove the soup from the heat and blend it with an immersion blender until a smooth, creamy texture forms. Stir in the cream and a pinch of nutmeg.
  7. Add the sausage pieces to the hot soup and let them warm up for a few minutes.
  8. Pour the soup into bowls, let it cool down, and always check the temperature before serving. Serve topped with the whole wheat croutons and parsley.

Variations and Tips

  • Swap the vegetables: You can replace some of the potatoes with carrots or sweet potatoes. This gives the soup a sweet touch that many children enjoy.
  • Storage: The soup keeps well in an airtight container in the fridge for about two days. It also freezes beautifully. It is best to freeze the soup without the sausages and cream.
  • Adjust the texture: For younger siblings, you can blend the soup even smoother and skip the croutons. For older children, leaving a few vegetable chunks adds a nice bite.
  • For parents: Adults can easily spice up their portion at the table with some freshly ground black pepper, chili flakes, or fresh chives.
