Introduction

This mild, naturally sweet spread made from roasted pumpkin and cream cheese is a favorite for many families. It spreads easily onto soft bread, encouraging independent eating at the family table. It also provides a wonderful way to offer an extra portion of vegetables during snack time.

Ingredients

  • 200 g Hokkaido pumpkin (organic recommended, as the skin can be eaten)
  • 100 g full-fat cream cheese
  • 1 tsp canola oil or rapeseed oil
  • 1 pinch sweet paprika
  • Optional: a sprinkle of finely chopped fresh parsley

Preparation

  1. Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit).
  2. Wash the Hokkaido pumpkin, remove the seeds, and cut it into small cubes.
  3. Toss the pumpkin cubes with the oil and spread them evenly on a baking sheet.
  4. Roast in the hot oven for about 15 to 20 minutes until soft and lightly browned.
  5. Let the roasted pumpkin cool slightly, then blend it with the cream cheese in a bowl until a smooth, creamy consistency forms.
  6. Stir in the pinch of sweet paprika and the fresh parsley.
  7. Allow the spread to cool to room temperature and always check the temperature before serving.

Variations & Tips

  • Vary the veggies: Instead of pumpkin, you can easily use roasted carrots or sweet potatoes.
  • Storage: Covered in the fridge, the spread stays fresh for about two to three days.
  • Freezing: You can freeze the spread in small portions. The texture of the cream cheese might change slightly after thawing, but you can fix this by giving it a good stir.
  • For the whole family: Adults can easily season their own portions at the table with a pinch of salt, pepper, or chili flakes.
