Creamy Pumpkin Risotto with Mild Gouda for Toddlers

A wonderfully soft risotto that is easy to scoop, making it perfect for little eaters joining the family table. The mild cheese and natural sweetness of the pumpkin make it very appealing to toddlers while providing valuable energy for active days. The creamy texture also helps your child practice eating independently with a spoon.

Ingredients

  • 200 g Hokkaido pumpkin (organic recommended)
  • 100 g risotto rice (e.g., Arborio)
  • 1 small onion
  • 1 tbsp canola or olive oil
  • 400 ml mild vegetable broth (low sodium)
  • 30 g mild Gouda cheese (grated)
  • 1 pinch sweet paprika
  • 1 tsp chopped parsley

Preparation

  1. Wash the Hokkaido pumpkin thoroughly, remove the seeds, and cut the flesh into very small, fine cubes. Peel the onion and chop it very finely as well.
  2. Heat the oil in a pot over medium heat. Sauté the onion and pumpkin cubes for about three minutes until translucent.
  3. Add the risotto rice and stir well until the rice grains are slightly glossy.
  4. Pour in a ladle of the warm vegetable broth and let it simmer over low to medium heat. Stir regularly to prevent sticking.
  5. Once the liquid is almost absorbed, add the next ladle of broth. Repeat this process for about 20 to 25 minutes until the rice is soft and a smooth, creamy mixture forms.
  6. Remove the pot from the heat and stir in the grated Gouda, paprika, and parsley.
  7. Let the risotto cool down sufficiently. Always check the temperature yourself before serving it to your child.

Variations & Tips

  • Switching vegetables: Instead of pumpkin, you can use finely grated carrots or zucchini.
  • For the parents: Adults can enjoy this dish with a little extra salt, freshly ground black pepper, and roasted pumpkin seeds on top.
  • Storage: The risotto will keep in the refrigerator for up to two days in an airtight container.
  • Freezing: You can easily freeze leftovers in individual portions and gently reheat them when needed.
  • Adjusting texture: If your child prefers a smoother meal, you can pre-cook the pumpkin and mash it slightly before adding it to the rice.

This recipe contains dairy (Gouda) and celery (often found in vegetable broth), which are among the EU-14 allergens. Always introduce new ingredients one at a time and in small amounts to easily observe any potential reactions.
