Creamy Pumpkin Soup with Crispy Croutons

This creamy pumpkin soup is a favorite in many families because its mildly sweet flavor is highly appealing. Ingredients

  • 500 g Hokkaido pumpkin (organic recommended)
  • 2 medium potatoes (approx. 150 g)
  • 1 small onion
  • 1 tbsp canola oil or mild olive oil
  • 400 ml mild vegetable broth (low sodium)
  • 50 ml heavy cream or a plant-based alternative
  • 1 pinch of nutmeg
  • 2 slices of whole wheat bread for the croutons
  • 1 tsp butter or oil for toasting

Preparation

  1. Wash the Hokkaido pumpkin thoroughly, cut it in half, and remove the seeds with a spoon. Dice the flesh, including the skin, into small pieces.
  2. Peel the potatoes and the onion, and chop them into fine cubes as well.
  3. Heat the oil in a pot and sauté the diced onion until translucent. Add the pumpkin and potatoes, frying them briefly.
  4. Deglaze with the vegetable broth and let everything simmer gently over medium heat for about 15 to 20 minutes. The vegetables are ready when they are nice and soft.
  5. Meanwhile, cut the whole wheat bread into small cubes. Heat the butter in a pan and toast the bread cubes until they are golden brown and crispy.
  6. Remove the soup from the stove, stir in the cream and a pinch of nutmeg, and blend everything with an immersion blender until smooth and creamy. Always let it cool down and test the temperature before serving.

Variations and Tips

  • Different vegetables: You can easily replace part of the pumpkin with carrots or sweet potatoes.
  • Storage: The soup keeps well in an airtight container in the fridge for about two days. It also freezes beautifully and lasts up to three months in the freezer.
  • For the whole family: Adults can season their own portions directly at the table with a little salt, pepper, or some roasted pumpkin seeds.
  • Adjusting texture: For younger siblings, you can simply leave the soup a bit thicker or thin it out with a little water.
