
Creamy Tagliatelle with Salmon and Spinach

Preparation
- Cook the tagliatelle according to the package instructions in unsalted or lightly salted water. Drain the water and set the noodles aside.
- Cut the salmon fillet into bite-sized, small cubes. Heat the canola oil in a large pan over medium heat and gently fry the salmon until it is completely cooked through (this takes about 5 minutes).
- Add the spinach, mild vegetable broth, and cream directly to the salmon in the pan. Let everything simmer gently together for about 5 minutes until the spinach wilts and a smooth, rich sauce forms.
- Season the sauce with a pinch of nutmeg and a splash of lemon juice. Finally, gently fold in the cooked tagliatelle until they are well mixed with the sauce.
- Allow the dish to cool slightly. Always test the temperature before feeding or serving to prevent burns.

- Vegetable variety: Instead of spinach, small broccoli florets, fine peas, or grated zucchini also fit wonderfully into this creamy sauce.
