Preparation
- Finely dice the onion and grate the zucchini on a fine grater.
- Heat the olive oil in a pot over medium heat and sauté the diced onions until translucent.
- Add the risotto rice and grated zucchini, cooking briefly until the edges of the rice look slightly clear.
- Pour in the strained tomatoes and about one third of the vegetable broth. Stir in the herbs and paprika powder.
- Let the risotto simmer gently over low heat for about 20 to 25 minutes. Stir regularly and gradually add the remaining broth as soon as the liquid is absorbed.
- Once the rice is soft and a smooth, creamy texture forms, remove the pot from the heat. Fold in the Parmesan and let the dish cool down well before serving. Always test the temperature before feeding your child.
