Preparation

  1. Sauté the finely diced onion in a pot with olive oil until translucent.
  2. Add the risotto rice and toast briefly until the edges of the grains look slightly clear.
  3. Stir in the strained tomatoes and about one third of the vegetable broth.
  4. Let it simmer gently over medium heat, stirring regularly to prevent sticking.
  5. Gradually add the remaining broth as the liquid is absorbed by the rice.
  6. After about 20 minutes, fold in the quartered cherry tomatoes and cook for another 5 minutes until the risotto forms a smooth, creamy mixture.
  7. Remove the pot from the heat, then gently stir in the mini mozzarella balls and freshly torn basil.
  8. Allow the dish to cool down well and always test the temperature before serving so your child does not burn their mouth.

Variations and Tips

  • Hidden Veggies: You can easily add finely grated carrots or zucchini right at the beginning when sautéing the onions to incorporate even more vegetables.
  • Storage: The risotto keeps well in a sealed container in the fridge for up to two days. Freezing is possible, though it slightly alters the texture of the rice.
