Crispy Cream Puffs with Vanilla Cream for Kids

Ingredients

For the choux pastry:
- 125 ml water
- 25 g softened butter
- 1 pinch of salt
- 75 g all-purpose flour
- 2 eggs (medium)
For the filling:
- 200 ml heavy whipping cream
- 1 tsp vanilla extract (or the seeds of half a vanilla bean)
- 1 tbsp powdered sugar
Preparation
- Bring the water, butter, and salt to a boil in a small saucepan.
- Add the flour all at once and stir vigorously with a wooden spoon until a dough ball forms and a white film appears on the bottom of the pan (this takes about 1 to 2 minutes).
- Transfer the dough ball to a bowl and let it cool slightly.
- Beat in the eggs one at a time using a hand mixer until the dough is smooth and glossy.
- Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit) and line a baking sheet with parchment paper.
- Fill the dough into a piping bag and pipe small mounds onto the baking sheet, leaving enough space between them.
- Bake in the preheated oven for about 20 to 25 minutes until golden brown. Important: Do not open the oven door during the first 15 minutes, or the puffs will collapse.
- Remove the cream puffs, slice them open horizontally immediately, and let them cool completely on a wire rack.
- Whip the heavy cream with the vanilla extract and powdered sugar until stiff peaks form.
- Fill the cooled cream puffs with the vanilla cream. Always check the temperature before serving if the puffs still have residual heat.
