Crispy Family Flammkuchen with Sweet Corn and Mild Ham

Introduction

A crispy, thin crust topped with creamy sour cream, sweet corn, and mild cooked ham makes a wonderful family meal. This Flammkuchen is easy to cut into small pieces and eat by hand, which brings many children a lot of joy. Assembling the toppings together also gently supports fine motor skills and sparks curiosity about different ingredients.

Ingredients

For 2 to 3 portions:

  • 250 g spelt flour (type 630 or all-purpose, organic if possible)
  • 125 ml lukewarm water
  • 2 tbsp mild olive oil
  • 1 pinch of salt (for the dough)
  • 150 g sour cream or crème fraîche
  • 100 g mild cooked ham (diced small)
  • 100 g sweet corn (canned or jarred, drained)
  • 1 spring onion (only the mild green parts, thinly sliced)
  • A little fresh parsley or chives for garnishing

Preparation

  1. Preheat the oven to 220 degrees Celsius (conventional heat) and line a baking sheet with parchment paper.
  2. In a bowl, knead the spelt flour, lukewarm water, olive oil, and a pinch of salt until a smooth dough forms.
  3. Roll the dough out very thinly on a lightly floured surface and place it on the prepared baking sheet.
  4. Spread the sour cream evenly over the dough, leaving a small border around the edges.
  5. Scatter the diced ham, drained sweet corn, and fine spring onion rings over the sour cream.
  6. Bake the Flammkuchen in the preheated oven for about 12 to 15 minutes until the edges are crispy and lightly browned.
  7. Remove the Flammkuchen from the oven, let it cool briefly, and check the temperature before serving so your child does not burn their mouth.

Variations & Tips

  • Veggie Variation: Simply swap the ham for small bell pepper cubes or halved cherry tomatoes to create a colorful vegetarian version.
  • Storage: Leftovers keep well in the fridge for about two days when covered. You can easily crisp them up in the oven for a few minutes. Freezing the baked Flammkuchen is possible, though the crust often becomes a bit softer after thawing.
