Introduction

Ingredients
- 500 g waxy potatoes (organic if possible)
- 1 small onion
- 1 egg
- 2 tbsp spelt flour (or wheat flour)
- 1 pinch of salt
- Canola oil for frying
- 250 g quark (or plain whole milk yogurt)
- 2 tbsp milk or sparkling water
- 1 handful of mild herbs (parsley, chives)
Preparation
- Peel and wash the potatoes, then grate them coarsely using a box grater.
- Peel the onion, dice it very finely, and mix it into the grated potatoes along with the egg, flour, and a small pinch of salt.
- Heat a little canola oil in a large pan over medium heat.
- For each pancake, place about two tablespoons of the mixture into the pan, flatten it, and fry on both sides for about five to seven minutes until golden brown and crispy.
- While the pancakes are cooking, stir the quark with the milk or sparkling water until smooth and fold in the finely chopped herbs.
- Let the finished pancakes drain on a paper towel. Allow them to cool sufficiently and always check the temperature before serving so your child does not burn their mouth.
Variations & Tips
- For a more colorful variation, you can replace half of the potatoes with grated carrots or zucchini.
- The pancakes can be stored in an airtight container in the fridge for about two days. They also freeze wonderfully and can be crisped up in the oven later.
