Crispy Potato Pancakes with Homemade Applesauce

Introduction

This warming autumn dish made from freshly grated potatoes is wonderfully crispy on the outside and soft on the inside. Ingredients

For the potato pancakes (about 2 to 3 portions):

  • 600 g potatoes (preferably organic)
  • 1 small onion
  • 1 egg (medium)
  • 2 tablespoons fine rolled oats or spelt flour
  • A tiny pinch of salt
  • 3 tablespoons canola oil for frying

For the applesauce:

  • 4 medium apples (such as Gala or Honeycrisp)
  • 50 ml water
  • 1 pinch of cinnamon (preferably Ceylon cinnamon)

Preparation

  1. Peel, core, and cut the apples into small cubes.
  2. Bring the apple pieces, water, and cinnamon to a boil in a small pot, then let them simmer over medium heat for about 10 to 15 minutes until a chunky sauce forms.
  3. Meanwhile, peel the potatoes and the onion, then grate them finely into a bowl.
  4. Squeeze the grated mixture well to remove excess water.
  5. Mix the egg, rolled oats, and a tiny pinch of salt into the potato mixture until everything is well combined.
  6. Heat the canola oil in a pan over medium heat.
  7. Place one tablespoon of the mixture per pancake into the pan, flatten slightly, and fry for about 4 to 5 minutes on each side until golden brown and crispy.
  8. Let the pancakes drain on a paper towel. Allow them to cool sufficiently and check the temperature before serving so your child does not burn their mouth.

Variations & Tips

  • Colorful vegetables: Replace a third of the potatoes with grated carrots, zucchini, or sweet potatoes for extra color and vitamins.
  • Storage: The finished pancakes keep well in an airtight container in the fridge for up to two days. You can also freeze them and bake them in the oven later to make them crispy again.
  • Adjusting texture: For children who prefer a smoother consistency, you can easily puree the applesauce after cooking.
  • For the whole family: Adults often enjoy topping their portion with some herb quark, fresh chives, or a pinch of black pepper.
