Introduction

Ingredients

For about 2 to 3 portions, you will need:

  • 150 g whole spelt flour (organic if possible)
  • 100 g cold butter
  • 100 g grated cheese (such as mild Gouda or Emmental)
  • 1 tbsp cold water
  • 1 pinch sweet paprika powder

Preparation

  1. Place the whole spelt flour, the cold butter cut into small pieces, the grated cheese, and a pinch of paprika powder into a bowl.
  2. Knead everything quickly with your hands or a food processor until a crumbly dough forms.
  3. Add the cold water and continue kneading until the mixture comes together into a smooth ball of dough.
  4. Wrap the dough in a beeswax wrap or some cling film and place it in the refrigerator for about 30 minutes.
  5. Preheat the oven to 180 degrees Celsius (top and bottom heat) and line a baking sheet with parchment paper.
  6. Roll out the dough on a lightly floured surface to a thickness of about three to four millimeters.
  7. Cut out small crackers using cookie cutters and place them on the prepared baking sheet.
  8. Bake the crackers for about 10 to 12 minutes until they take on a golden-yellow color.
  9. Let the crackers cool completely on a wire rack, and always check the temperature before your child takes a bite.

  • Veggie Boost: Mix one tablespoon of very finely grated carrot into the dough to add a little extra vegetable goodness to the snack.
  • Storage: Stored in an airtight container at room temperature, the crackers stay crispy for about three to four days.
  • Freezing: The raw dough freezes beautifully and can be thawed in portions as needed.
  • Adjusting Texture: For children who prefer a softer bite, you can roll the dough slightly thicker and reduce the baking time by two minutes.
