Fluffy Spelt Blueberry Pancakes for Kids

Seasonal2+y 15 min 4 VeggieMedium
Contains: Gluten, Dairy, Egg

These summery little pancakes bring fresh blueberries straight to the plate. They are wonderfully soft, not too messy, and have a naturally mild sweetness. This recipe makes an excellent warm breakfast or a sweet main dish on sunny days. The combination of spelt flour and berries provides valuable energy that your child needs for an active day.

Why Pancakes are Ideal for Toddlers

Small pancakes are wonderful finger food for curious eaters. Your child can easily grasp the handy pieces themselves, which gently supports fine motor skills and hand-eye coordination. Since the batter is made without added sugar, children get to know the natural, mild flavors of the ingredients. Many families appreciate recipes like this because they fit seamlessly and relaxedly into everyday family meals.

Ingredients

  • 150 g spelt flour (light or fine whole grain)
  • 1 tsp baking powder
  • 1 egg (organic if possible)
  • 150 ml milk (or an unsweetened plant-based alternative)
  • 1 tbsp canola oil (plus a little extra for cooking)
  • 100 g fresh blueberries
  • Optional: 1 pinch of cinnamon for a lovely flavor

Preparation

  1. Place the spelt flour, baking powder, and cinnamon in a large bowl and mix the dry ingredients.
  2. Add the egg, milk, and canola oil. Whisk everything together until you have a smooth, thick batter.
  3. Wash the fresh blueberries and gently fold them into the mixture.
  4. Heat a little canola oil in a non-stick pan over medium heat.
  5. Pour about one to two tablespoons of batter per pancake into the pan and cook until golden brown on both sides (about two to three minutes per side).
  6. Let the finished pancakes cool thoroughly on a plate. Always check the temperature before feeding, as the baked berries inside can remain very hot.

Variations & Tips

  • Fruity Alternatives: Instead of blueberries, you can also make this recipe with small apple pieces, raspberries, or chopped strawberries.
  • Storage: The pancakes will keep in an airtight container in the fridge for up to two days. They also freeze beautifully. Place a little parchment paper between the pancakes when freezing so you can easily take them out one by one.
  • Adapting the Texture: If your child prefers softer pieces, you can lightly mash the blueberries with a fork before folding them in.
  • For the Whole Family: Adults and older siblings can top their pancakes at the table with a drizzle of maple syrup, chopped walnuts, or a dollop of plain yogurt.

Allergy and Safety Information

  • This recipe contains the EU allergens gluten (spelt flour), egg, and milk (dairy).
  • When introducing new foods, it is best to offer them one at a time and in small amounts. This allows you to easily observe any potential reactions.
  • If you have any uncertainties about introducing solid foods, potential allergies, or your child's diet, please always consult your pediatrician.

Nutritional Information

Spelt flour provides valuable complex carbohydrates and fiber, which help keep your child comfortably full for longer. Fresh blueberries are packed with vitamin C and antioxidants that support overall well-being. Together with the protein from the milk and egg, this creates a wonderfully balanced and nutritious meal for your child.
