Fluffy Steamed Noodles with Warm Vanilla Sauce

Introduction

This warm, sweet main dish is a true highlight for cozy family days. The soft yeast dough is incredibly easy for young children to chew and swallow. At the same time, the combination of carbohydrates and milk provides wonderful energy for active days. It is a beautiful recipe that creates shared moments at the dining table and encourages little ones to explore new flavors.

Ingredients

For the yeast dough (yields 2 to 3 portions):

  • 250 g wheat flour (all-purpose, organic preferred)
  • 125 ml milk (lukewarm)
  • 30 g soft butter
  • 15 g sugar (approx. 1 tbsp)
  • 1/2 cube fresh yeast (approx. 20 g, or 1 packet dry yeast)
  • 1 pinch of salt

For steaming in the pan:

  • 100 ml milk
  • 20 g butter
  • 1 tsp sugar

For the mild vanilla sauce:

  • 250 ml milk
  • 10 g cornstarch
  • 1 tbsp sugar
  • Seeds from 1/2 vanilla bean

Preparation

  1. Whisk the lukewarm milk with the yeast and sugar in a bowl. Add the flour, soft butter, and a pinch of salt.
  2. Knead everything into a supple dough until a smooth consistency is reached. Cover the dough and let it rest in a warm place for about 45 minutes.
  3. Shape the dough into four to six equally sized balls. Cover them again and let them rise for another 15 minutes.
  4. For the vanilla sauce, mix a splash of the cold milk with the cornstarch until smooth. Bring the remaining milk, sugar, and vanilla seeds to a boil, stir in the cornstarch mixture, and let it thicken briefly.
  5. In a large pan with a tight-fitting lid, heat the milk, butter, and sugar for steaming. Place the dough balls inside and close the lid immediately.
  6. Let the noodles steam over medium heat for about 15 to 20 minutes. Do not open the lid during this time, as the dough might collapse.
  7. Important before serving: Allow the steamed noodles and the sauce to cool down sufficiently. Always perform a temperature check before your child takes the first bite.

Variations & Tips

  • Fruity twist: Instead of vanilla sauce, serve the steamed noodles with unsweetened applesauce or pear compote.
  • Storage: Leftover steamed noodles keep well in the fridge for about two days. They also freeze beautifully and can be quickly reheated in the oven.
  • Adapting the texture: For younger siblings, you can tear the noodles into small, bite-sized pieces. This makes them especially easy to grasp.
  • For the whole family: Adults often enjoy sprinkling a little cinnamon and sugar over the hot noodles or adding toasted sliced almonds.
