French Macarons with Raspberry Ganache for Little Bakers

Ingredients for about 15 small macarons

  • 70 g almond flour (very finely ground)
  • 70 g powdered sugar
  • 50 g egg white (about one and a half eggs)
  • 45 g caster sugar
  • 1 drop of red food coloring (optional)
  • 100 g white chocolate (for the filling)
  • 30 ml heavy cream (for the filling)
  • 30 g seedless raspberry puree (for the filling)

Preparation

  1. Sift the almond flour and powdered sugar into a bowl. Discard any coarse pieces so the macarons develop a smooth surface later.
  2. Whip the egg whites in a clean bowl. Slowly pour in the caster sugar until a glossy, stiff peak forms.
  3. Gently fold the almond and powdered sugar mixture into the egg whites. Continue folding until the batter flows thickly from the spatula.
  4. Transfer the batter to a piping bag and pipe small circles onto a baking sheet lined with parchment paper. Tap the tray lightly on the counter to release air bubbles.
  5. Let the macarons rest at room temperature for about 30 minutes until a noticeable skin forms on the surface.
  6. Bake in a preheated oven at 140 degrees Celsius (convection) for 13 to 15 minutes. Allow them to cool completely on the baking sheet.
  7. For the ganache, heat the cream and raspberry puree, then pour over the chopped white chocolate. Stir everything into a smooth cream and let it set in the refrigerator.
  8. Find two matching macaron halves, fill them with the cream, and gently press them together. Do a quick temperature check before tasting, just in case the cream is still slightly warm.

Variations and Tips

You can easily replace the raspberries with strawberries or blueberries. This creates exciting new flavor combinations for your family to enjoy. The unfilled macaron shells freeze exceptionally well in an airtight container. Once filled, they stay fresh in the refrigerator for about two to three days. If you want to involve younger children, let them help sort the matching halves.
