Preparation

  1. Wash the cucumber thoroughly, cut it in half lengthwise, and gently scoop out the seeds with a small spoon. This creates the shape of a little boat.
  2. Wash the cherry tomatoes and cut them into very fine, bite-sized cubes. Chop the fresh herbs finely as well.
  3. In a small bowl, mix the cream cheese with the diced tomatoes and herbs until a smooth, slightly chunky mixture forms.
  4. Spoon the creamy mixture evenly into the hollowed-out cucumber halves and smooth the top lightly.
  5. Cut the filled cucumbers into manageable pieces, about one inch wide. Before serving, check quickly that the pieces are easy for your child to hold and bite.
