Ingredients

  • A small pinch of mild salt
  • 1 large carrot
  • 0.5 cucumber
  • 0.5 red bell pepper

Preparation

  1. Wash all the vegetables thoroughly under running water.
  2. Peel the carrot and cut it, along with the cucumber and bell pepper, into manageable, finger-thick sticks.
  3. Place the quark and plain yogurt in a bowl and stir until smooth.
  4. Fold in the finely chopped herbs, lemon juice, and a pinch of salt until a creamy dip forms.
  5. Serve the quark in a small bowl and arrange the colorful vegetable sticks around it.
  6. Check the temperature briefly. If the quark is very cold from the fridge, let it sit for a few minutes to reach a comfortable temperature before eating.

  • Creative vegetable choices: You can easily swap carrots or cucumbers for kohlrabi or celery sticks.
  • Storage: The herbed quark keeps well in an airtight container in the fridge for about two days. Freezing is not recommended, as the texture becomes watery and grainy.
