  • 20 g soft butter
  • 1 egg white
  • 20 g powdered sugar

Preparation

  1. Knead the flour, cold butter cubes, and water in a bowl into a smooth dough.
  2. Press the dough into three small tart tins and bake at 180 degrees Celsius (top and bottom heat) for 15 minutes until golden brown.
  3. For the filling, heat the lemon juice, whole egg, maple syrup, and soft butter in a small saucepan over low heat.
  4. Let the mixture thicken under constant stirring for about 10 minutes until a creamy texture forms.
  5. Spread the lemon cream evenly over the cooled tart crusts.
  6. Whisk the egg white with the powdered sugar over a hot water bath until the mixture is firm and glossy.
  7. Pipe the meringue onto the tarts and carefully toast it with a kitchen torch or bake briefly in the oven.
  8. Let everything cool down completely and always do a temperature check before eating.

  • Fruity alternative: Orange juice is an excellent substitute for a milder flavor profile.
  • Storage: The mini tarts keep in the fridge for up to two days. Freezing is not recommended, as the meringue becomes soggy after thawing.
