Baking these fruity lemon butterfly muffins together is a wonderful experience for children aged three and up. Ingredients

  • 2 tbsp maple syrup or agave nectar
  • For the topping: 2 tbsp cream cheese, 1 tsp lemon juice, a little fruit puree (for example raspberry)

Preparation

  1. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit) and line a muffin tin with six paper liners.
  2. Wash the organic lemon with hot water, finely grate the zest, and squeeze out the juice.
  3. In a bowl, whisk the soft butter with the applesauce, egg, maple syrup, lemon zest, and two tablespoons of lemon juice.
  4. Add the spelt flour and baking powder, mixing briefly until a smooth batter forms.
  5. Divide the batter evenly among the liners and bake in the preheated oven for about 15 to 18 minutes until golden brown.
  6. Let the muffins cool completely, then carefully slice off the top third (the dome) of each muffin.
  7. Cut the removed domes in half down the middle to create two wings for each muffin.
  8. Mix the cream cheese with one teaspoon of lemon juice and a little fruit puree, spread it on the muffins, and gently press the wings into the topping at an angle.

  • Fruity twist: Gently fold a handful of small blueberries into the batter before filling the muffin cups.
  • Storage: The decorated muffins will keep in the fridge in an airtight container for about two days. Without the cream cheese topping, they freeze beautifully for up to three months.
