Fruity Pear Pockets from Quark Dough: A Fun Baking Recipe

These fruity pear pockets made from a simple quark dough are perfect for little hands aged three and up, as the dough is smooth and easy to handle. Ingredients

This recipe makes about two to three portions.

  • 150 g all-purpose or spelt flour
  • 125 g plain quark or thick plain yogurt (organic preferred)
  • 3 tbsp neutral vegetable oil (like canola oil)
  • 2 tbsp milk
  • 1 ripe pear
  • 1 pinch of Ceylon cinnamon

Preparation

  1. Preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit) and line a baking sheet with parchment paper.
  2. In a bowl, knead the flour, quark, oil, and milk until a smooth dough forms. The dough is ready when it feels soft and no longer sticks to your fingers.
  3. Peel the pear, remove the core, and cut it into small, soft cubes. Toss the cubes gently in a small bowl with a pinch of cinnamon.
  4. Roll out the dough on a lightly floured surface and use a glass or cookie cutter to cut out circles (about 8 to 10 cm in diameter).
  5. Your child can now place a small spoonful of the diced pears into the center of each circle.
  6. Fold the dough circles in half to create half-moons, and press the edges firmly together using the tines of a fork.
  7. Place the pockets on the baking sheet and bake for about 15 to 20 minutes until golden brown.
  8. Important: Let the pastries cool down completely after baking. Always check the temperature of the fruit filling before serving, as the inside often stays very hot for a while.

Variations & Tips

  • Mix up the filling: Instead of pears, you can easily use apples, unsweetened applesauce, or fresh summer berries.
  • Storage: The pear pockets will keep well in an airtight container in the fridge for two to three days. They also freeze beautifully and can be quickly reheated in the oven.
  • For the whole family: Adults often enjoy adding a few chopped walnuts to the filling for extra crunch. Remember to only offer nuts finely ground to young children to prevent choking hazards.
