Fruity Raspberry Cruffins from Homemade Laminated Dough

Introduction

Baking together is a wonderful way to playfully support your child's fine motor skills and patience. These fruity raspberry cruffins, a fun mix of a croissant and a muffin, offer a great experience for little bakers. Kneading, folding, and rolling the dough brings lots of joy and sparks an early love for homemade treats.

Ingredients

Makes about 6 cruffins (2 to 3 portions):

  • 250 g spelt flour (type 630 or all-purpose flour, organic if possible)
  • 1 tsp active dry yeast
  • 100 ml lukewarm milk
  • 1 tbsp maple syrup or mild sweetener
  • 80 g soft butter (for spreading and laminating)
  • 4 tbsp fruity raspberry spread (no added sugar)
  • A little extra butter for greasing the muffin tin

Preparation

  1. Mix the flour and dry yeast together in a large bowl.
  2. Add the lukewarm milk and maple syrup, and knead everything into a smooth dough.
  3. Cover the dough and let it rest in a warm place for about 45 minutes until it has visibly expanded.
  4. Roll the dough out into a rectangle on a floured surface and spread a thin layer of about one-third of the soft butter over it.
  5. Fold the short ends of the dough toward the center, overlapping them, and roll it out again (this process is called laminating).
  6. Repeat this step two more times with the remaining butter to create beautiful flaky layers.
  7. Roll the dough out one last time and spread the raspberry fruit spread evenly across the surface.
  8. Roll the dough up tightly from the long side and cut the log into six equal pieces.
  9. Place the pieces cut-side up into a greased muffin tin and bake at 180 degrees Celsius (350 degrees Fahrenheit) for about 20 minutes until golden brown.
  10. Let the cruffins cool completely and check the temperature of the fruity filling before your child takes a bite.

Variations & Tips

  • Vary the filling: Instead of raspberries, you can use unsweetened applesauce or a mild nut butter blend.
  • Storage: The cruffins will keep in an airtight container in the fridge for up to two days.
  • Freezing: They freeze beautifully and can be quickly reheated in the oven when needed.
  • Family tip: For the adults in the family, you can dust the baked cruffins with a little powdered sugar.
