During the early weeks of pregnancy, appetite often fluctuates and the stomach can be quite sensitive. This mild dish, featuring fully cooked poultry and gentle vegetables, provides valuable energy without feeling heavy. The light sauce and rice are especially soothing for digestion.
Ingredients
For 2 to 3 portions you will need:
- 300 grams ground turkey
- 1 small onion, finely diced
- 1 tablespoon canola oil
- 3 large carrots, peeled and thinly sliced
- 200 milliliters vegetable broth
- 100 grams cream cheese (pasteurized)
- 150 grams rice (such as basmati or brown rice)
- A pinch of salt and mild herbs like parsley
Preparation
- Cook the rice according to the package instructions in lightly salted water.
- Mix the ground turkey with the finely diced onion and a pinch of salt, then form small meatballs.
- Heat the canola oil in a pan and brown the turkey meatballs on all sides until they are fully cooked through.
- Add the sliced carrots and sauté them briefly.
- Pour in the vegetable broth and let everything simmer gently for about ten minutes.
- Stir in the cream cheese until a creamy sauce forms, then season with mild herbs.
- Serve the turkey meatballs and carrot sauce warm over the cooked rice.
Good to know
These meatballs are easy to prepare a day ahead and store in the refrigerator. When reheating the dish, make sure the meat becomes thoroughly hot all the way through.
If you are having a hard time
If nausea is strong, you can skip the onion and bake the meatballs gently in the oven instead. Eating just the plain rice with a little carrot sauce is also a comforting option when you have no appetite for meat.
