
Golden-Brown Oat Patties with Refreshing Cucumber Salad
Introduction
In the third trimester, there is often little room in the belly for large meals. These oat patties are wonderfully mild while providing long-lasting energy. The fresh cucumber salad adds a pleasant coolness, which is often soothing when experiencing heartburn.
Ingredients
For 2 to 3 portions, you will need:
- 150 g quick oats
- 150 ml hot vegetable broth
- 1 egg
- 1 small carrot, finely grated
- 1 onion, finely diced
- A little canola oil for frying
- 1 cucumber
- 2 tablespoons yogurt (made from pasteurized milk)
- 1 tablespoon vinegar
- Fresh dill, salt, and pepper
Preparation
- Pour the hot broth over the oats in a bowl and let the mixture sit for ten minutes to absorb the liquid.
- Mix the egg, grated carrot, and diced onion into the oat mixture.
- Season the mixture with a pinch of salt and pepper.
- Shape the mixture into small, flat patties using damp hands.
- Fry the patties in a pan with a little canola oil on both sides until golden brown and cooked all the way through.
- Slice the cucumber thinly.
- Stir the yogurt, vinegar, and dill into a dressing and toss it with the cucumber slices.
Good to know
The patties are excellent eaten cold as a snack the next day. You can also vary the mixture with other vegetables, such as finely grated zucchini. If you use zucchini, make sure to squeeze out the excess water first.
If things are hard right now
If you are experiencing severe heartburn, you can simply leave the onion out of the patties. When warm food triggers nausea, these patties taste great once they have cooled down. The cucumber salad can also be enjoyed completely plain with just a pinch of salt if needed.
