Green Spring Spinach Waffles with Mild Herb Quark

Ingredients

For about 2 to 3 portions, you will need the following ingredients:

For the waffles:

  • 150 g spelt flour (or all-purpose flour)
  • 100 g fresh baby spinach (organic preferred)
  • 2 eggs
  • 150 ml milk (or oat drink)
  • 50 g soft butter (or neutral oil)
  • 1 tsp baking powder
  • A small pinch of salt
  • A little oil for the waffle iron

For the herb quark:

  • 200 g quark (or plain whole milk yogurt)
  • 1 tbsp olive oil
  • 1 tbsp finely chopped mild herbs (parsley, chives)
  • A splash of lemon juice

Preparation

  1. Wash the baby spinach thoroughly and let it drain well.
  2. Blend the spinach and milk in a tall container until you have a smooth, bright green liquid.
  3. In a bowl, beat the soft butter and eggs together until frothy.
  4. Stir the flour, baking powder, and salt into the egg mixture, alternating with the spinach milk.
  5. Preheat your waffle iron and brush it lightly with a little oil.
  6. Bake the batter in batches for about three to four minutes until the waffles are slightly crispy on the outside.
  7. For the dip, simply mix the quark with olive oil, herbs, and a splash of lemon juice.
  8. Allow the waffles to cool briefly on a wire rack before serving. Always check the temperature before your child takes the first bite.

Variations & Tips

  • Swap the veggies: Instead of spinach, finely grated zucchini works beautifully in this recipe. Just squeeze out the excess moisture beforehand so the batter stays thick.
  • Storage: The baked waffles keep well in the fridge for up to two days in an airtight container. They are also highly freezable and can be popped straight into the toaster when needed.
  • For the whole family: Adults might enjoy the herb dip seasoned with a little garlic, black pepper, and an extra pinch of salt. A fresh tomato salad makes a great side dish.
