Healthy Sheet Pan Döner Kebab with Chicken, Coleslaw, and Tzatziki

Introduction

This dish is a perfect, healthier alternative to classic fast food and is incredibly popular with many children. It offers high-quality protein from the chicken and valuable vitamins from the fresh vegetables. Everyone at the table can fill their own flatbread, which wonderfully encourages the joy of eating together.

Ingredients

For the sheet pan chicken:

  • 400 g chicken breast fillet (organic if possible)
  • 2 tbsp olive oil
  • 1 tsp sweet paprika powder
  • 0.5 tsp ground cumin
  • 1 pinch of salt
  • 1 pinch of mild curry powder

For the coleslaw:

  • 200 g white cabbage
  • 1 tbsp olive oil
  • 1 tbsp mild apple cider vinegar
  • 1 pinch of salt

For the mild tzatziki:

  • 150 g Greek yogurt
  • 0.5 cucumber
  • 1 small garlic clove (optional, very finely chopped)
  • 1 tsp fresh dill (chopped)

To serve:

  • 2 to 3 small whole-wheat flatbreads (pita)
  • 1 tomato (sliced)
  • A few leaves of iceberg lettuce

Preparation

  1. Preheat the oven to 200 degrees Celsius (top and bottom heat).
  2. Cut the chicken breast fillet into very fine, bite-sized strips. Toss the meat in a bowl with olive oil, paprika powder, cumin, curry powder, and a pinch of salt.
  3. Spread the marinated meat on a baking sheet lined with parchment paper. Cook thoroughly in the hot oven for about 15 to 20 minutes until crispy.
  4. Meanwhile, cut the white cabbage into very fine strips or grate it. Knead vigorously with your hands using olive oil, apple cider vinegar, and a little salt until the cabbage softens.
  5. For the tzatziki, grate the cucumber and gently squeeze out the excess water. Mix the grated cucumber with the yogurt, garlic, and dill.
  6. Place the flatbreads in the oven during the last 3 minutes to warm them up.
  7. Remove the cooked meat from the oven and let it cool slightly before serving. Please test the temperature of the meat and the bread before your child begins to eat.

Variations & Tips

  • Swap vegetables: You can easily replace the white cabbage with grated carrots or mild bell pepper strips.
  • Storage: The cooked meat and coleslaw will keep covered in the fridge for about two days. Freezing the meat is possible, ideally in small, airtight containers.
  • Adjusting texture: For children who still find crunchy cabbage tricky to chew, you can lightly steam the vegetables beforehand.
  • For the whole family: Adults can spice up their own flatbread at the table with some chili flakes or a hotter paprika powder.

This recipe contains gluten (flatbread) and dairy (yogurt). Always introduce new foods one at a time and in small amounts to easily observe any potential reactions.

Make sure the chicken is completely cooked through. Raw dairy products, raw meat, or raw fish are not suitable for young children.
