
Hearty Kale and Potato Stew with Sausages for Toddlers
This traditional winter dish warms you up wonderfully on cold days. Fresh kale and filling potatoes provide many important nutrients for active toddlers. The savory flavor of the sausages often makes this meal a true family favorite.
Ingredients
For 2 to 3 portions, you will need the following ingredients:
- 300 g fresh kale (washed, hard stems removed)
- 400 g potatoes (waxy or all-purpose)
- 1 small onion
- 1 tbsp canola or sunflower oil
- 500 ml mild vegetable broth (low sodium)
- 2 Mettenden (smoked sausages, or mild smoked sausage alternatives)
- 1 pinch of nutmeg
- A little black pepper
Preparation
- Wash the fresh kale thoroughly and cut it into very fine strips.
- Peel the potatoes and the onion, then cut them into small, bite-sized cubes.
- Heat the oil in a large pot and sauté the diced onion until translucent.
- Add the kale and potatoes, stirring briefly to coat them in the oil.
- Pour in the vegetable broth, place the whole sausages on top of the vegetables, and close the lid.
- Let the stew simmer gently over medium heat for about 30 to 40 minutes, until the vegetables are very soft.
- Remove the sausages, cut them into small slices, and mix them back into the stew.
- Allow the stew to cool well before serving, and check the temperature to ensure your child does not burn their mouth.
Variations & Tips
- Swap the veggies: For a milder taste, you can replace some of the kale with carrots or sweet potatoes.
- Storage: The stew keeps well in an airtight container in the fridge for up to two days. It also freezes beautifully in individual portions.
- Texture adaptation: For children who are still practicing chewing, you can lightly mash the potatoes with a fork at the end of the cooking time.
- For the whole family: Adults can season their portion at the table with a little mustard or extra pepper for a stronger flavor.
