Hearty Potato Goulash with Mild Vienna Sausages

This warming potato goulash with soft sausage rounds is a true comfort meal for the whole family. It provides plenty of energy for active children aged three and older, featuring a wonderfully creamy, mild sauce. The soft potato pieces are easy to chew, supporting fine motor skills during independent eating.

Ingredients

  • 500 g waxy potatoes (organic preferred)
  • 2 mild Vienna sausages (or mild hot dogs)
  • 1 small onion
  • 1 red bell pepper
  • 1 tbsp canola oil
  • 1 tbsp sweet paprika powder (very mild)
  • 400 ml low-sodium vegetable broth
  • 2 tbsp heavy cream or oat cream
  • 1 pinch mild black pepper
  • A little fresh parsley

Preparation

  1. Peel the potatoes and cut them into small, bite-sized cubes. Finely dice the onion and cut the bell pepper into very small pieces.
  2. Heat the canola oil in a pot over medium heat. Sauté the diced onion until translucent, then briefly fry the bell pepper and potatoes.
  3. Sprinkle the sweet paprika powder over the vegetables and stir briefly to release the flavor. Immediately pour in the vegetable broth to prevent the spices from burning.
  4. Let the stew simmer gently over medium heat for about 15 to 20 minutes, until the potatoes are soft and the sauce slightly thickens.
  5. Meanwhile, slice the Vienna sausages into thin rounds. Add them to the goulash about 5 minutes before the end of the cooking time to warm through.
  6. Remove the pot from the stove, stir in the cream, and refine with a pinch of pepper and chopped parsley. Let the dish cool well before serving, and always check the temperature before your child takes the first bite.

Variations & Tips

  • Vary the vegetables: You can easily swap the bell pepper for carrots or zucchini if your child prefers those.
  • Storage: The goulash keeps well in an airtight container in the fridge for two days. It also freezes beautifully in individual portions.
  • For the parents: Adults can easily spice up their own portions at the table with some hot paprika, chili flakes, or a pinch of salt.
  • Adjusting the texture: For children who are still practicing with larger pieces, you can lightly mash the potatoes on their plate with a fork.
