This hearty raclette gratin brings a cozy winter classic to the family table as a simple, fuss-free casserole. For children aged three and up, this dish offers a wonderful combination of filling carbohydrates and warming winter vegetables. The creamy cheese layer makes the veggies especially appealing and invites everyone to enjoy a comforting meal together.

Ingredients

  • 400 g waxy potatoes (organic preferred)
  • 200 g carrots
  • 100 g leek (mild white and light green parts only)
  • 1 tbsp canola oil or butter
  • 100 ml whole milk
  • 50 ml low-sodium vegetable broth
  • 150 g raclette cheese (sliced, rind removed)
  • 1 pinch of nutmeg
  • 1 tsp fresh or dried parsley
  • A touch of black pepper (optional)

Preparation

  1. Preheat the oven to 200 degrees Celsius (standard top and bottom heat).
  2. Peel the potatoes and carrots, then cut them into thin slices about three millimeters thick. Wash the leek thoroughly and slice it into fine rings.
  3. Heat the oil or butter in a pan and sauté the leek for about three minutes until translucent.
  4. Layer the potatoes, carrots, and leek alternately in a lightly greased baking dish.
  5. Whisk the milk, vegetable broth, nutmeg, and parsley together in a small bowl. Pour the mixture evenly over the vegetables.
  6. Tear the raclette cheese into smaller pieces and distribute them generously over the gratin.
  7. Bake the gratin in the preheated oven for about 30 to 35 minutes, until the vegetables are tender and the cheese is golden brown.
  8. Remove the casserole from the oven and let it cool down well before serving. Carefully check the temperature before letting your child taste it.

Variations & Tips

  • Switch up the veggies: Swap the leek for mild zucchini or small broccoli florets.
  • Storage: Leftovers will keep in the fridge for up to two days when covered. Freezing is not recommended, as potatoes often become mealy and watery when thawed.
  • For the whole family: Parents can enhance their own portions right on the plate with freshly ground black pepper, roasted onions, or crispy bacon bits.
  • Adjusting the texture: For children who still find larger pieces tricky, you can pre-cook the vegetables slightly longer before baking.
