Homemade Bread Dumplings with Mild Mushroom Cream Sauce

A comforting Southern German classic, perfect for young children thanks to the soft texture of the dumplings. The mild sauce made from delicate mushrooms and cream tastes wonderfully rich. A meatless comfort meal for the whole family.

Ingredients

  • 4 stale bread rolls (approx. 250 g)
  • 150 ml whole milk
  • 2 eggs (medium)
  • 1 small onion
  • 1 tbsp butter
  • 1 tbsp chopped parsley
  • 1 pinch of nutmeg
  • 250 g brown button mushrooms
  • 1 small onion (for the sauce)
  • 1 tbsp canola oil or butter
  • 150 ml heavy cream
  • 100 ml mild vegetable broth
  • 1 tsp chopped parsley (for the sauce)

Preparation

  1. Cut the bread rolls into small cubes and place them in a bowl. Gently warm the milk and pour it over the bread cubes.
  2. Finely dice one onion and sauté in butter until translucent. Add the onion, eggs, parsley, and a pinch of nutmeg to the bread, knead everything well, and let the mixture rest for about 15 minutes.
  3. Meanwhile, clean the mushrooms and cut them into thin slices. Finely dice the second onion, sauté in oil, add the mushrooms, and cook briefly.
  4. Deglaze the mushrooms with the vegetable broth and heavy cream. Let the sauce simmer over medium heat for about 10 minutes until it thickens slightly, then stir in the parsley.
  5. Form small dumplings from the bread mixture using damp hands. Bring a large pot of water to a boil, reduce the heat, and let the dumplings simmer gently for about 15 minutes.
  6. Remove the dumplings with a slotted spoon, distribute them on plates, and serve with the sauce. Let the meal cool down and check the temperature before serving.

Variations and Tips

  • The mushrooms can easily be swapped for grated carrots or peas.
  • Leftover dumplings keep in the fridge for up to two days and taste fantastic pan-fried in a little butter the next day.
  • The raw, shaped dumplings can be frozen easily and dropped directly into hot water when needed.
  • Adults at the table can season their own portions with a little salt and freshly ground black pepper.

  • This recipe contains gluten (bread), egg, and dairy (milk, butter, cream). Always introduce new ingredients one at a time and in small amounts.
  • Cut the dumplings and mushrooms into bite-sized pieces for toddlers to make chewing easier. Only use cultivated store-bought mushrooms for children, as foraging wild mushrooms carries a high risk of confusion with toxic varieties.
