Homemade Cod Fish Sticks with Soft Sweet Potato Wedges

Introduction

These crispy, oven-baked fish sticks are a wonderful way to offer your child fish in a mild, child-friendly form. Paired with soft sweet potatoes, they make a colorful finger food that little hands can easily grasp. Ingredients

  • 250 g fresh cod fillet (boneless, organic if possible)
  • 1 medium sweet potato (approx. 200 g)
  • 50 g fine rolled oats (for breading)
  • 1 egg
  • 2 tbsp olive oil
  • 1 tsp mild paprika
  • 1 pinch dried thyme

Preparation

  1. Preheat the oven to 200 degrees Celsius (conventional heat) and line a baking sheet with parchment paper.
  2. Peel the sweet potato, cut it into finger-thick, manageable wedges, and toss with one tablespoon of olive oil and a pinch of thyme.
  3. Rinse the cod fillet under cold water, pat dry, and carefully check for any stray bones.
  4. Cut the fish into bite-sized, elongated strips.
  5. Whisk the egg in a shallow bowl, and mix the rolled oats with the paprika in a separate bowl.
  6. Dip each piece of fish first into the egg, then roll it in the oat mixture until fully coated.
  7. Place the breaded fish sticks and the sweet potato wedges side by side on the prepared baking sheet.
  8. Bake everything for about 15 to 20 minutes until golden brown, ensuring the fish is cooked completely through and the sweet potatoes are tender.
  9. Allow the meal to cool down well and always check the temperature before offering it to your child.

Variations & Tips

  • Vary the vegetables: Instead of sweet potatoes, soft carrot sticks or parsnips make an excellent side dish.
  • Storage: Leftovers can be kept in an airtight container in the fridge for up to two days. The baked fish sticks also freeze well and can be reheated in the oven when needed.
  • For the whole family: Adults and older siblings can easily season their portions at the table with a little salt, pepper, and a squeeze of fresh lemon.
  • Adjusting texture: For children who are still practicing their chewing, you can gently mash the baked sweet potatoes with a fork.
