
Homemade Fish Sticks with Creamy Potato Salad
Introduction
Homemade oven-baked fish sticks are a wonderful way to offer your child fish in a familiar, crispy format. Ingredients
For the fish sticks:
- 300 g pollock fillet (boneless, ideally MSC certified)
- 2 tbsp all-purpose flour (or spelt flour)
- 1 egg (organic)
- 50 g breadcrumbs or panko
- 1 tbsp canola oil
For the potato salad:
- 400 g waxy potatoes
- 1/4 cucumber
- 3 tbsp plain yogurt (whole milk)
- 1 tsp mild mustard
- 1 tbsp fresh dill (finely chopped)
- A pinch of salt and pepper (age-appropriate amount)
Preparation
- Wash the potatoes thoroughly and boil them in a pot of water for about 20 minutes until tender.
- Meanwhile, preheat the oven to 200 degrees Celsius (top and bottom heat) and line a baking sheet with parchment paper.
- Rinse the pollock fillet under cold water, pat dry, and carefully check for any remaining bones. Cut the fish into even strips, about two centimeters thick.
- Place the flour, the beaten egg, and the breadcrumbs into three separate shallow bowls. Roll the fish strips first in the flour, then dip them in the egg, and finally coat them evenly in the breadcrumbs.
- Place the breaded fish sticks on the baking sheet, brush them lightly with canola oil, and bake in the oven for 15 minutes until golden brown.
- Peel the boiled potatoes, let them cool slightly, and cut them into bite-sized slices. Peel the cucumber, halve it lengthwise, scoop out the seeds with a spoon, and slice thinly.
- Mix the yogurt, mustard, dill, a pinch of salt, and pepper in a bowl to create a creamy dressing. Gently fold in the potatoes and cucumbers.
- Let everything cool down well before serving and always check the temperature so your child does not burn their mouth.

- Vegetable variation: Instead of cucumber, finely grated carrots or small apple pieces also taste wonderful in the potato salad and add a gentle sweetness.
- Storage: The potato salad will keep for up to two days in the refrigerator when covered. The fish sticks taste best fresh, but they can be frozen raw after breading and baked straight from the freezer when needed.
- Texture adjustment: For younger siblings, you can cook the potatoes a little softer and gently steam the fish without the breading in a little water.
- For the whole family: Adults can season their portion of the salad with a little vinegar, finely chopped onions, and stronger spices to taste.
