  • 2 medium kohlrabies
  • 100 ml low-sodium vegetable broth
  • 50 ml heavy cream
  • 1 tsp cornstarch
  • 1 tbsp chopped parsley

Step-by-Step Preparation

  1. Peel the potatoes, cut them into even chunks, and boil in lightly salted water for about 20 minutes until tender.
  2. Peel the kohlrabi, dice it finely, and let it simmer gently in the vegetable broth for about 15 minutes until pleasantly soft.
  3. Soak the day-old bread in warm water, squeeze out the excess moisture, and mix it well in a bowl with the ground beef, egg, finely diced onion, chopped parsley, and mustard.
  4. Shape the mixture into small, flat meatballs and fry them in a pan with a little canola oil over medium heat for 8 to 10 minutes on each side until fully cooked through.
  5. Whisk the cream with the cornstarch, add it to the kohlrabi, and bring to a brief boil until a creamy sauce forms. Finish it off with fresh parsley.
  6. Drain the cooked potatoes, mash them with milk and butter until smooth, and season with a pinch of nutmeg.
  7. Let the meal cool down on the plate and always check the temperature before serving your child.

  • Vegetable swaps: Carrots or peas also work wonderfully in this creamy sauce if kohlrabi is not available. This easily brings variety to your meal plan.
