Homemade Pumpkin Seed and Cranberry Granola Bars
These compact bars made from oats, pumpkin seeds, and cranberries are fantastic for the active daily life of children three years and older. They offer wonderful energy for preschool or the playground and are made entirely without refined sugar. The combination of complex carbohydrates and healthy fats supports a long-lasting feeling of fullness. This means parents always have a practical, nutritious snack close at hand.
Ingredients
This recipe makes about two to three portions, which yields roughly six small bars:
- 100 g rolled oats (organic preferred)
- 40 g pumpkin seeds (lightly chopped for younger children)
- 40 g dried cranberries (unsweetened)
- 2 tbsp almond butter (or sunflower seed butter for a nut-free version)
- 2 tbsp maple syrup or agave nectar
- 1 tbsp coconut oil
- 1 pinch of cinnamon
Preparation
- Preheat the oven to 160 degrees Celsius (convection) and line a small rectangular baking dish with parchment paper. This makes it much easier to remove the bars later.
- Gently warm the almond butter, maple syrup, and coconut oil in a small saucepan over low heat. Stir continuously until a smooth, creamy mixture forms.
- Mix the oats, pumpkin seeds, cranberries, and cinnamon in a bowl. Add the warm liquid and stir everything thoroughly so the ingredients combine well.
- Pour the mixture into the prepared dish and press it down very firmly with a spoon. The firmer the mixture is pressed, the better the bars will hold together.
- Bake in the preheated oven for about 15 minutes until the edges are lightly golden brown.
- Remove the dish from the oven and let it cool completely before cutting the mixture into bars. Always check the temperature before your child tastes the snack.
Variations & Tips
- Fruity variety: Simply swap the cranberries for unsulfured, finely chopped apricots or raisins.
- Storage: The bars keep well in an airtight container in the fridge for up to five days. They also freeze beautifully and can be thawed individually as needed.
- Adjusting the texture: For children who are still learning to chew harder bits, you can finely grind the pumpkin seeds beforehand.
- For the whole family: Adults can elevate their own bars by adding a pinch of sea salt or a drizzle of melted dark chocolate.
Allergy & Safety Information
This recipe contains almonds (tree nuts) and oats (gluten). New ingredients are best introduced one at a time and in small amounts, so you can easily observe any potential reactions. Whole pumpkin seeds can sometimes pose a choking hazard, so chopping or grinding them is a helpful safety measure. If you adapt the recipe and use honey, remember that it is not safe for children under twelve months of age. If you have any concerns about your child's diet or potential allergies, please consult your pediatrician.
Nutritional Value
The oats in this snack provide valuable dietary fiber and complex carbohydrates for steady energy. Pumpkin seeds are a wonderful source of plant-based iron and healthy fats, which are important for growth. Cranberries add a touch of natural sweetness along with Vitamin C, which optimally supports iron absorption in the body.
