Introduction

Ingredients

For about two to three portions, you will need the following ingredients:

  • 100 g spelt flour (whole wheat or all-purpose)
  • 1 small apple (approx. 80 g)
  • 1 small carrot (approx. 50 g)
  • 1 egg (medium)
  • 100 ml milk (dairy or plant-based)
  • 2 tbsp neutral oil (like canola oil)
  • 1 tsp baking powder
  • A pinch of cinnamon (Ceylon cinnamon)
  • A little oil for the waffle iron

Preparation

  1. Wash and peel the apple and the carrot.
  2. Grate both very finely using a box grater until you have a soft mixture.
  3. In a bowl, mix the spelt flour, baking powder, and cinnamon together.
  4. Add the egg, milk, oil, and the grated apple and carrot to the dry ingredients.
  5. Stir everything well until a smooth, thick batter forms.
  6. Preheat your waffle iron to a medium setting and lightly grease it.
  7. Bake the waffles for about three to four minutes until they are golden brown.
  8. Let the waffles cool completely on a wire rack and always test the temperature before serving.

Variations & Tips

  • Feel free to swap the carrot for zucchini to add some colorful variety to the plate.
  • The waffles will keep in an airtight container in the fridge for about two days.
  • They freeze exceptionally well and can be quickly reheated in the toaster.
  • For the whole family, you can serve these waffles with a drizzle of maple syrup or a side of fresh fruit salad.
