Juicy Carrot Cake with Creamy Cream Cheese Frosting

Introduction

Ingredients

  • 150 g carrots, finely grated
  • 100 g spelt flour
  • 50 g ground almonds
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 2 eggs
  • 50 ml canola oil
  • 50 g unsweetened applesauce
  • 2 tbsp maple syrup
  • 100 g cream cheese, full fat
  • 1 tsp maple syrup for the frosting
  • 3 small marzipan carrots for decoration

Preparation

  1. Preheat the oven to 180 degrees Celsius and grease a small baking pan.
  2. Wash, peel, and finely grate the carrots.
  3. In a bowl, whisk the eggs with the oil, applesauce, and the first part of the maple syrup until frothy.
  4. Fold in the spelt flour, ground almonds, baking powder, and cinnamon until a smooth batter forms.
  5. Gently fold the grated carrots into the mixture.
  6. Pour the batter into the pan and bake for about 30 minutes. Use a wooden skewer to check if the cake is fully baked.
  7. Let the cake cool completely. For the frosting, stir the cream cheese with the remaining maple syrup until smooth and spread it over the cold cake.
  8. Decorate with the marzipan carrots. Always check the temperature before serving so your child does not burn their mouth.

Variations and Tips

  • Swap the veggies: You can replace half of the carrots with finely grated zucchini for a fun twist.
  • Storage: The cake keeps well in the refrigerator, covered, for about two to three days. It freezes beautifully in individual slices without the frosting.
  • For the whole family: Double the recipe and use a standard cake pan to share with guests.
