Juicy Carrot Cake with Lemon Glaze for Easter

Introduction

This moist carrot cake brings a taste of spring to your table and is a wonderful treat for children aged three and up. Naturally sweetened by carrots and enriched with ground almonds, it provides great energy for active afternoons. Baking together also supports fine motor skills when little hands help stir and mix the batter.

Ingredients

  • 150 g carrots (finely grated, organic if possible)
  • 2 eggs
  • 50 ml canola oil
  • 40 g fine sugar or maple syrup
  • 50 g ground almonds (very fine)
  • 80 g spelt flour
  • 1 tsp baking powder
  • 0.5 tsp cinnamon
  • For the glaze: 3 tbsp powdered sugar, 1 to 2 tsp fresh lemon juice

Preparation

  1. Preheat the oven to 180 degrees Celsius (standard bake) and grease a small baking pan (about 18 cm in diameter).
  2. Whisk the eggs, sugar, and oil in a bowl until the mixture is light and frothy.
  3. Gently fold the finely grated carrots and ground almonds into the egg mixture.
  4. Combine the flour, baking powder, and cinnamon, then add them to the bowl and stir briefly until just combined.
  5. Pour the batter into the pan and bake for about 25 to 30 minutes.
  6. Let the cake cool down completely.
  7. For the glaze, mix the powdered sugar with the lemon juice until smooth and drizzle it over the cooled cake. Always check the temperature before serving.

Variations & Tips

  • You can easily swap the carrots for finely grated zucchini or apples to keep the cake just as moist.
  • The cake stays fresh in the fridge for two to three days when covered and freezes beautifully in individual slices.
  • For younger siblings, simply skip the glaze and cut the cake into small, easy-to-hold cubes.
  • Adults might enjoy adding a pinch of ground ginger or extra lemon zest to the batter for a more complex flavor.
