Juicy Carrot Muffins with Creamy Cream Cheese Topping for Kids

Introduction

These juicy carrot muffins are a wonderful springtime treat for children from three years of age. The finely grated carrots make the dough naturally sweet and wonderfully soft. At the same time, the vitamins provide energy for the day and support healthy growth.

Ingredients

(For 6 muffins, about 2 to 3 portions)

  • 100 g spelt flour (ideally organic)
  • 50 g finely ground almonds or hazelnuts
  • 1 tsp baking powder
  • 0.5 tsp Ceylon cinnamon
  • 1 egg (medium size)
  • 30 ml canola oil
  • 30 ml unsweetened applesauce
  • 1 tbsp maple syrup (optional)
  • 100 g finely grated carrots

For the topping:

  • 100 g cream cheese (full fat)
  • 1 tsp maple syrup
  • A few drops of lemon juice

Preparation

  1. Preheat the oven to 180 degrees Celsius (top and bottom heat) and line a muffin tin with six paper liners.
  2. Peel the carrots and grate them on a fine grater until you have small, soft shreds.
  3. In a bowl, mix the spelt flour, ground nuts, baking powder, and cinnamon together.
  4. In a second bowl, whisk the egg, canola oil, applesauce, and maple syrup until a smooth, creamy mixture forms.
  5. Add the liquid ingredients to the dry ingredients and stir briefly, then gently fold in the grated carrots.
  6. Distribute the batter evenly among the muffin cups and bake in the oven for about 20 minutes.
  7. For the topping, stir the cream cheese with the maple syrup and lemon juice until creamy.
  8. Let the muffins cool completely, spread the topping on them, and always check the temperature inside before offering them to your child.

Variations & Tips

  • Swap the veggies: Instead of carrots, finely grated zucchini works wonderfully for a green variation.
  • Storage: The muffins without the topping will keep in an airtight container in the fridge for up to three days.
  • Freezing: The baked dough freezes beautifully for up to three months. It is best to prepare the topping fresh.
  • Adjusting texture: For younger siblings, the nuts can be replaced with more flour to make the consistency even softer.
  • For the whole family: Adults can enhance their muffins with chopped walnuts or a pinch of ginger.
