Juicy Chocolate Zucchini Brownies

Snacks2+y 40 min 4 VeggieMedium
Contains: Gluten, Egg, Tree nuts

Introduction

These moist brownies are a wonderful way to tuck some extra vegetables into a delicious treat. The finely grated zucchini creates a fantastic texture while providing valuable fiber for your child. It is a real favorite for young chocolate fans and relies on natural sweetness.

Ingredients

  • 100 g zucchini (about half a small zucchini, organic if possible)
  • 1 ripe banana
  • 1 egg
  • 30 g almond butter (or another mild nut butter)
  • 50 g whole wheat flour (or spelt flour)
  • 20 g unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 tbsp maple syrup (optional, for a touch of extra sweetness)

Preparation

  1. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit) and lightly grease a small baking dish.
  2. Grate the zucchini very finely and gently squeeze out the excess liquid with your hands.
  3. Mash the banana with a fork until smooth, then stir in the egg and almond butter.
  4. Add the grated zucchini to the wet mixture and combine everything thoroughly.
  5. In a separate bowl, mix the flour, cocoa powder, and baking powder together.
  6. Gently fold the dry ingredients into the wet mixture until a smooth batter forms.
  7. Pour the batter into the dish and bake for about 20 to 25 minutes.
  8. Let the brownies cool completely before cutting them into small pieces and checking the temperature before serving.

Variations & Tips

  • Swap the veggies: Finely grated carrots or sweet potatoes work beautifully instead of zucchini.
  • Storage: The brownies stay fresh for about three days when stored in an airtight container in the fridge.
  • Freezing: You can easily freeze the baked pieces and thaw them individually as needed.
  • Family twist: Adults and older kids might enjoy adding chopped walnuts or dark chocolate chips to the batter.

Allergy & Safety Notes

This recipe contains eggs, gluten (flour), and tree nuts (almond butter). Introduce new foods one at a time and in small amounts to easily spot any potential reactions. Only use nuts in the form of smooth butter for children this age, as whole nuts pose a choking hazard. If you have any questions about your child's diet or potential allergies, please consult your pediatrician.

Nutritional Information

The zucchini and whole grain flour provide essential fiber for healthy digestion. Cocoa powder and almond butter contain valuable minerals like iron and magnesium. These nutrients perfectly support the active daily life and growth of children aged three and older.
