This juicy Easter lamb brings festive joy to the family table and is perfectly suited for little hands. Thanks to the natural sweetness from dates and applesauce, it provides valuable energy for active toddlers. The soft texture gently supports your child in practicing their chewing skills and exploring new mouthfeels.

Ingredients

For a small Easter lamb baking mold (about 3 to 4 toddler portions) you will need:

  • 100 g spelt flour (Type 630 or all-purpose)
  • 50 g finely ground almonds
  • 1 tsp baking powder
  • 70 g date paste (puréed from soft dates)
  • 60 g unsweetened applesauce
  • 2 eggs (medium)
  • 40 ml neutral vegetable oil (like canola oil)
  • 1 pinch of Ceylon cinnamon
  • A little butter and flour for the mold

Preparation

  1. Preheat the oven to 180 degrees Celsius (conventional). Thoroughly grease the Easter lamb mold and dust it with a little flour so the cake does not stick.
  2. Whisk the eggs together with the date paste and applesauce in a bowl until a smooth, frothy mixture forms.
  3. Slowly pour in the canola oil while continuing to stir.
  4. In a separate bowl, mix the spelt flour, ground almonds, baking powder, and cinnamon.
  5. Briefly fold the dry ingredients into the wet mixture until just combined into a smooth batter.
  6. Pour the batter into the prepared mold and bake in the oven for about 25 to 30 minutes.
  7. Let the finished lamb cool in the mold before carefully removing it. Always check the temperature before serving so your child does not burn their mouth.

  • Fruity twist: Swap the applesauce for pear purée to achieve a slightly milder flavor profile.
  • Storage: Stored in an airtight container, the cake keeps well in the fridge for about three days. You can also slice the baked lamb and freeze it for up to three months.
  • Texture adaptation: For children who are still learning to chew, you can dip the cake slice in a little milk or unsweetened tea to make it even softer.
  • For the whole family: Adults can dust their slice with a little powdered sugar or enjoy it with a scoop of vanilla ice cream.
