Juicy Meatloaf with a Hidden Egg for the Whole Family

Family meals2+y 60 min 4Medium
Contains: Gluten, Egg, Mustard

Introduction

This hearty meatloaf hides hard boiled eggs in its center, making it especially exciting for your child when sliced open. Discovering the surprise together at the dining table often sparks curiosity for new meals and motivates little eaters to try unfamiliar textures. Such a family meal creates a relaxed atmosphere at the table where eating brings joy. Additionally, the combination of meat and egg provides valuable building blocks for growth. Many children enjoy the soft consistency of the meatloaf, as it is easy to chew and swallow.

Why this recipe is ideal for families

The classic hidden egg meatloaf is wonderful to prepare in advance. While the dish bakes in the oven, you have time for shared moments or other preparations. The soft texture of the ground meat perfectly suits a child's chewing habits. Many children love surprises in their meals, and the hidden egg in the center often brings bright eyes to the family table.

Ingredients

  • 500 g mixed ground meat (organic quality recommended for a good nutrient profile)
  • 3 hard boiled eggs (medium size, preferably free range)
  • 1 raw egg (medium size, to bind the mixture)
  • 1 small onion, very finely diced
  • 1 clove of garlic, finely minced
  • 3 tablespoons breadcrumbs
  • 1 teaspoon mild mustard (adds a gentle flavor without heat)
  • 1 teaspoon dried parsley
  • 1 pinch of salt and a little pepper (use very sparingly)
  • 1 tablespoon canola oil (for greasing the pan)

Preparation

  1. Preheat the oven to 180 degrees Celsius (conventional heat) and lightly grease a small baking dish with canola oil. Canola oil works particularly well for this.
  2. Knead the ground meat, raw egg, finely diced onion, minced garlic, breadcrumbs, mustard, parsley, a pinch of salt, and pepper thoroughly in a large bowl until a smooth and cohesive mixture forms.
  3. Place half of the meat mixture into the prepared dish and form a shallow trench lengthwise down the middle.
  4. Place the peeled, hard boiled eggs in a row inside this trench.
  5. Spread the remaining meat mixture evenly on top and seal the edges well. It is important that the eggs are completely covered.
  6. Bake the meatloaf in the oven for about 45 minutes. The meat must be completely cooked through, with no pink remaining inside.
  7. Remove the finished meatloaf from the oven and let it cool slightly. Always check the internal temperature before serving it to your child.

Variations and Tips

  • Hide some veggies: You can mix a finely grated carrot or zucchini into the meat mixture. This makes the meatloaf even juicier and adds an extra portion of vegetables to the plate.
  • Storage: Leftovers keep well in the fridge for up to two days when covered. The meatloaf also freezes beautifully in thick slices. When needed, simply thaw and gently warm them up.
  • Adjust the texture: For children who are still practicing eating solid pieces, you can cut the meatloaf into very small cubes or mash it slightly with a fork.
  • For the parents: Adults can add a richer gravy, fresh herbs, or extra spices like chili flakes to their own portions at the table.
  • Side dish tip: Mild boiled potatoes and steamed peas or carrots make excellent sides that many children really enjoy.

Allergy and Safety Information

This recipe contains eggs, mustard, and gluten (in the breadcrumbs), which belong to the main food allergens. Always introduce new foods one at a time and in small amounts to carefully observe any potential reactions. When preparing meat dishes, always pay strict attention that the meat is completely cooked through before serving. Raw or undercooked meat is not suitable for young children. If you have any uncertainties about introducing solid foods, general nutrition, or suspect an allergy, please always consult your pediatrician.

Nutritional Information

This dish provides plenty of iron from the meat, which is important for blood formation and a good oxygen supply in the body. The eggs contribute high-quality protein that supports muscle development and general physical growth. Because iron from animal sources is particularly well absorbed by the body, this dish serves as an excellent source of energy. A side of potatoes and vegetables perfectly complements the meal with essential fiber as well as vitamin C.
