Juicy Mini Meatloaves with Creamy Kohlrabi Vegetables
Introduction
These little meatloaves are perfect for small hands and have a wonderfully juicy texture. Paired with mild, creamy kohlrabi, this creates a comforting meal for children aged three and older. The dish provides valuable iron and vitamins for daily growth and invites the whole family to enjoy dinner together.
Ingredients
- 300 g mixed ground meat (organic quality recommended)
- 1 small day-old bread roll (soaked in water)
- 1 small onion (very finely diced)
- 1 pinch of salt and mild paprika
- 1 tbsp canola oil for frying
- 2 medium kohlrabi
- 150 ml vegetable broth (low sodium)
- 50 ml heavy cream or oat cream
- 1 tsp cornstarch
- 1 pinch of nutmeg
Preparation
- Preheat the oven to 180 degrees Celsius (top and bottom heat). Squeeze the water out of the soaked bread roll and mix it well with the ground meat, finely diced onion, salt, and paprika.
- Form the meat mixture into four to six small, flat mini meatloaves. Heat the canola oil in a pan and briefly sear the meatloaves on both sides.
- Transfer the meatloaves to a baking dish and bake in the oven for 15 minutes to ensure they are cooked completely through.
- Meanwhile, peel the kohlrabi and cut it into bite-sized, small cubes. Bring the kohlrabi to a boil in a pot with the vegetable broth and simmer for about 10 minutes until soft.
- Whisk the cornstarch with the cream until smooth and add it to the kohlrabi. Let it boil briefly until a creamy sauce forms, then refine with a small pinch of nutmeg.
- Arrange everything on plates and let it cool down well before serving. Always test the temperature before your child takes the first bite.
Variations and Tips
- Vegetable Variation: Instead of kohlrabi, fine carrot slices or peas taste wonderful in the light cream sauce.
- Storage: The dish will keep in the refrigerator for up to two days. The raw mini meatloaves freeze beautifully and can be freshly prepared when needed.
- For the Whole Family: Parents can season their portion at the table with fresh pepper, a little more salt, or fresh herbs like parsley.
- Side Dish: Boiled potatoes, mashed potatoes, or mild ribbon noodles pair very well with this meal.
