Preparation
- Preheat the oven to 180 degrees Celsius (conventional heat). Grease a small baking dish (about 15 by 20 cm) with a little butter.

- Mix the soft butter with the sugar or apple syrup until you get a creamy consistency. Add the egg and stir well.
- Combine the spelt flour and baking powder, then gently fold them into the batter along with the milk until just combined.
- Spread the batter evenly into the dish and arrange the apricot wedges on top.
- Bake in the oven for about 20 to 25 minutes until the cake turns golden brown.
- Let the cake cool completely and test the temperature before serving to ensure it is not too hot inside.
