Juicy Zucchini Chocolate Sheet Brownies

These moist brownies are a wonderful project for little bakers aged three and older. The finely grated zucchini makes the batter incredibly juicy while cleverly hiding an extra serving of vegetables. Children can easily help with stirring the batter and spreading it on the baking sheet, which gently supports their fine motor skills.

Ingredients

For a small baking sheet (about 2 to 3 family snack portions) you will need:

  • 200 g zucchini (organic preferred)
  • 100 g spelt flour
  • 2 tbsp unsweetened cocoa powder
  • 1 tsp baking powder
  • 50 g soft butter or neutral vegetable oil
  • 2 tbsp maple syrup or agave nectar
  • 2 eggs
  • 1 pinch of Ceylon cinnamon

Preparation

  1. Preheat the oven to 175 degrees Celsius (350 degrees Fahrenheit) and line a small baking sheet with parchment paper.
  2. Wash the zucchini, trim the ends, and grate the vegetable finely using a box grater.
  3. In a large bowl, whisk the soft butter, maple syrup, and eggs until a smooth, creamy mixture forms.
  4. Stir in the spelt flour, cocoa powder, baking powder, and cinnamon, then gently fold in the grated zucchini.
  5. Spread the batter evenly onto the prepared baking sheet and bake for about 20 to 25 minutes.
  6. Let the brownies cool completely and always check the temperature before serving them to your child.

Variations and Tips

Finely grated carrots or mild applesauce work beautifully as a substitute for the zucchini. This allows you to easily adapt the flavor to your family's preferences.

Stored in an airtight container in the fridge, the brownies stay fresh for about three days. They also freeze very well and can be thawed individually as needed.

Parents can upgrade their portions with a handful of chopped walnuts or a sprinkle of sea salt. This quickly turns the children's snack into a treat for the whole family.
