Light Pearl Barley Stew with Fine Root Vegetables

Why this dish feels good during pregnancy

Especially in the first few weeks of pregnancy, the body often craves mild, warming meals. This light pearl barley stew is gentle on the stomach while providing good, steady energy. The combination of soft barley and fine vegetables is incredibly comforting when your appetite might still be fluctuating.

Ingredients for 2 to 3 portions

  • 100 g pearl barley
  • 1 bunch of root vegetables (carrots, celery root, leek)
  • 1 small potato
  • 800 ml mild vegetable broth
  • 1 tbsp canola or olive oil
  • Fresh parsley, finely chopped
  • A pinch of salt

Preparation

  1. Wash the soup vegetables, peel the potato, and cut everything into small cubes.
  2. Heat the oil in a pot and briefly sauté the vegetables.
  3. Add the barley and pour in the vegetable broth.
  4. Let the stew simmer gently over medium heat for about 30 to 35 minutes until the barley is tender.
  5. Season with a pinch of salt and sprinkle the fresh parsley on top before serving.

Good to know

Stews are wonderful for batch cooking and taste just as good reheated the next day. If you like, you can add a handful of canned chickpeas for a little extra sustenance.

When things feel difficult

If nausea is strong, you can leave out the leek, as it can sometimes be harder to digest. It often helps to eat the stew in small portions throughout the day, perhaps lukewarm rather than piping hot.
