Mild Apple-Quark Pockets for DIY Folding

Baking together at the family table brings joy and supports motor skills. These mild apple-quark pockets are perfect for little bakers from twelve months of age. A smooth quark and oil dough is rolled out and filled with unsweetened applesauce. Children can help out by cutting out circles and carefully folding the sweet pockets.

Ingredients

  • 150 g low-fat quark (or plain whole milk yogurt)
  • 5 tbsp canola oil
  • 5 tbsp milk (cow's milk or plant-based alternative)
  • 200 g spelt flour
  • 1 tsp baking powder
  • 150 g unsweetened applesauce
  • 1 pinch of Ceylon cinnamon

Preparation

  1. Preheat the oven to 180 degrees Celsius (top and bottom heat). Line a baking tray with parchment paper.
  2. In a large bowl, mix the quark, canola oil, and milk together. Combine the spelt flour with the baking powder and gradually knead it into the quark mixture until a smooth dough forms.
  3. Roll out the dough on a lightly floured surface to a thickness of about five millimeters. Use a large glass or a cookie cutter to cut out circles of about ten centimeters in diameter.
  4. Place one teaspoon of applesauce in the center of each circle and sprinkle a pinch of cinnamon on top. Fold the dough into half-moons and gently press the edges together with a fork.
  5. Place the pockets on the baking tray and bake for about 15 minutes until golden brown. Let them cool completely before serving and always check the temperature of the filling, as the applesauce often stays hot longer.

Variations & Tips

  • Fruity variety: The applesauce can easily be swapped out for unsweetened pear puree or mashed berries.
  • Storage: The pockets will keep in an airtight container in the fridge for about two days. They also freeze exceptionally well and can be quickly reheated in the toaster when needed.
  • Adjusting texture: For a softer consistency, cover the pockets with a damp cloth while they cool down after baking.
  • For the whole family: Adults can drizzle their portion with a little honey or sprinkle chopped almonds on top before baking.

Allergy & Safety

  • This recipe contains gluten (spelt flour) and dairy (quark, cow's milk), which belong to the EU14 allergens.
  • Always introduce new foods individually and in small amounts to easily observe any potential reactions.
  • Honey is not safe for children under twelve months due to the risk of infant botulism.
  • Nuts carry a high choking hazard and are best offered to toddlers only finely ground or as a smooth butter.
