- Optional: 50 g finely diced smoked tofu (for a mild flavor without tough bacon)
Preparation
- Crumble the fresh yeast into a bowl and dissolve it completely in the lukewarm water. Add the spelt flour and olive oil, then knead everything with your hands or a stand mixer until you have a smooth, pliable dough.
- Shape the dough into a ball, cover it with a clean kitchen towel, and let it rest in a warm place for about 45 minutes until it has visibly doubled in size.
- Meanwhile, peel the sweet onions, halve them, and cut them into fine half-rings. Heat the canola oil in a large pan and sauté the onions over medium heat for about 15 to 20 minutes until they are very soft and translucent.
- Preheat the oven to 200 degrees Celsius (top and bottom heat). In a small bowl, whisk the sour cream smoothly with the eggs, a tiny pinch of salt, and a little nutmeg.
