Mild Beef Stew with Sweet Potatoes

This mild stew warms from the inside and provides valuable energy for your day. Beef is a wonderful source of iron, while sweet potatoes offer gentle nourishment. The mild flavors are especially soothing when your stomach is feeling sensitive during pregnancy.

Ingredients (for two to three portions)

  • 300 g beef stew meat (cut into bite-sized pieces)
  • 1 large sweet potato
  • 200 g green beans (fresh or frozen)
  • 1 carrot
  • 1 small onion
  • 1 tablespoon canola oil
  • 600 ml mild vegetable broth
  • A pinch of salt, a little sweet paprika, and fresh parsley

Instructions

  1. Peel the sweet potato, carrot, and onion, and dice everything into small pieces.
  2. Wash the green beans and trim the ends.
  3. Heat the canola oil in a large pot and brown the beef thoroughly on all sides.
  4. Add the vegetables and sauté them briefly.
  5. Pour in the vegetable broth and season with a pinch of salt and a little sweet paprika.
  6. Let the stew simmer gently over medium heat for about 40 minutes.
  7. Ensure the meat is completely cooked through before serving.
  8. Sprinkle the dish with fresh parsley just before eating.

Stews are perfect for batch cooking and freezing in individual portions. This gives you a quick, warm meal on tiring days.

When things feel difficult

If you are experiencing heartburn or nausea, simply leave out the onion. You can also try eating the stew in several small portions throughout the day.
