Mild Couscous Patties with Bell Pepper and Herb Quark

These mild couscous patties with finely chopped bell pepper and a fresh herb quark make a wonderful family meal. They are lightly pan-fried on the outside and wonderfully soft on the inside, making them ideal for little hands to grasp and explore. The recipe provides valuable energy for active days and makes sharing meals at the family table a relaxed experience.

Ingredients

For 2 to 3 portions, you will need:

  • 100 g couscous
  • 150 ml mild vegetable broth (low sodium)
  • 1 small red bell pepper
  • 1 egg (medium)
  • 2 tbsp flour (wheat or spelt)
  • 1 tbsp canola oil for frying
  • 150 g whole milk quark (or plain full-fat yogurt)
  • 1 tbsp finely chopped parsley
  • A splash of lemon juice

Preparation

  1. Place the couscous in a heat-resistant bowl and pour the hot vegetable broth over it. Let the mixture sit for about 10 minutes until the liquid is fully absorbed.
  2. Meanwhile, wash the bell pepper, remove the seeds, and cut it into very fine, tiny cubes.
  3. Mix the cooled couscous with the diced pepper, egg, and flour until you get a shapeable, slightly sticky mixture.
  4. Heat the canola oil in a pan over medium heat. Form small, flat patties from the mixture and fry them gently on both sides until lightly golden.
  5. For the dip, stir the quark with the parsley and a splash of lemon juice until smooth.
  6. Allow the patties to cool down well before serving. Always check the temperature inside the patties before your child takes a bite.

Variations & Tips

  • The bell pepper can easily be replaced with finely grated zucchini or carrot. Gently squeeze out excess moisture from grated vegetables beforehand so the dough does not become too wet.
  • The patties will keep in the fridge for about two days. They also freeze beautifully, ideally separated by parchment paper in a container, and can be warmed up in the oven when needed.
  • For the adults at the table, you can season the patties on your own plate with a little more salt, pepper, or chili flakes.
