Mild Egg Ragout with Soft Mashed Potatoes and Peas
Introduction
This mild egg ragout is a wonderful, toddler-friendly take on traditional mustard eggs, perfect for children from 12 months of age. The soft texture of the mashed potatoes and eggs makes chewing easy and brings joy to shared family meals. At the same time, this dish provides valuable protein and energy for growing explorers.
Ingredients
- 3 medium potatoes (approx. 300 g, starchy or all-purpose)
- 2 eggs (organic if possible)
- 50 g frozen peas
- 100 ml whole cow's milk
- 1 tbsp butter (approx. 15 g)
- 1 tsp wheat flour
- 1 pinch of nutmeg
- 1 tiny pinch of salt (use very sparingly)
- 1 tsp fresh chopped parsley
Preparation
- Peel the potatoes, cut them into small cubes, and boil them in a pot with a little water for about 15 minutes until soft.
- Meanwhile, boil the eggs in a separate pot for 9 minutes until hard-boiled, then rinse with cold water and peel.
- For the mild sauce, melt the butter in a small saucepan and whisk in the flour briskly.
- Slowly pour in the milk while stirring constantly, bringing it to a simmer until a smooth and creamy sauce forms.
- Add the frozen peas to the sauce and let everything simmer gently for about 5 minutes.
- Season the sauce mildly with a tiny pinch of salt, a little nutmeg, and the fresh parsley.
- Drain the boiled potatoes, mash them finely with a potato masher, and stir in a splash of warm milk if needed to create a soft mash.
- Cut the hard-boiled eggs into small pieces and gently fold them into the warm pea sauce.
- Let the dish cool down well and always test the temperature before serving your child.
Variations & Tips
- Vary the vegetables: Instead of peas, finely diced carrots or small broccoli florets also taste great in the creamy sauce.
- Storage: You can store leftovers in an airtight container in the fridge for up to two days. Freezing this dish is not recommended, as potatoes and eggs often change their texture when thawed.
- Adjust the texture: For children who are just getting used to chunkier foods, you can chop the eggs even finer and lightly mash the peas with a fork.
- For the whole family: Parents can easily season their own portions directly at the table with a little mustard, black pepper, and extra salt.
